孙梦莹,女,博士,博士毕业于大连工业大学食品科学与工程专业,主要研究方向为益生菌功能评价、传统发酵乳制品微生物多样性与代谢关系及发酵剂研制和发酵乳的功能评价。以第一作者发表SCI论文4篇,其中一区3篇,中文核心1篇;参与“生物被膜态植物乳杆菌Y42抑制单增李斯特菌毒力表达机制研究(3207219207219)”、十四五国家重点研发计划“生态型复合发酵剂研创及发酵乳产业化(2022YFD21004072022YFD2100407)”、新疆生产建设兵团重大科技项目及横向课题2项。
主要研究领域或方向
1. 益生菌功能评价:通过体外功能实验进行功能性益生菌的筛选,结合体内功能验证,进行益生菌安全性及功能特性的评价;
2. 传统发酵乳制品微生物多样性与代谢关系研究:通过对传统发酵乳细菌、真菌多样性的组成及挥发性物质、氨基酸的联合分析,阐明传统发酵乳中微生物组成与代谢产物间的关系;
3. 发酵剂研制:从传统发酵乳中分离纯化出乳酸菌菌株,以产酸和产香作为初步筛菌指标,筛选出产酸快、产香高的乳酸菌菌株,再以感官接受度为指标筛选出感官评分高的发酵剂组合,并将其进行储藏测定其后酸化程度、质构、活菌数等指标,多方面评价发酵菌株的质量;
4. 发酵乳制品功能研究:通过高效液相色谱、非靶向代谢技术对发酵乳制品中营养组分、代谢物进行测定,阐明发酵过程中发酵菌株相互作用机制,并通过动物实验以炎症因子、肠道组织变化、肠道菌群组成对发酵乳的功能特性进行评价。
